Robuchon twice a day keeps the doctor away...

One of my favourite desserts at Robuchon: le Mont-Blanc (chestnut cream, whipped cream and blackberry coulis). These have tended to get quite soggy in recent months (kept in the fridge too long => not enough turnover ?? Or is the PC just getting complacent and not bothering to make a fresh batch every other day anymore ?). We will certainly monitor the situtation after the visit of Uncle Jo in early September and report in due course...
